Spicy Baked Beans

¾ c. chopped onion
3 T. maple syrup
1 ½ T. Dijon mustard
2 T. chipotle peppers in adobo, chopped finely*
3 cans (15 – 16 oz.) white beans, drained (navy or Great Northern)
1 ½ c. ketchup
1 ½ tsp. ground cinnamon
Salt and pepper to taste (you may not need any if the beans are salted)

* or puree a can of chipotles in adobo sauce in the blender and use 2 T. of the puree


Combine all ingredients except the beans, mixing well.  Stir in the beans.  Pour into a 9" x 13" baking dish that has been greased or sprayed with non-stick spray.  Bake in a 350 degree oven for 45 min.  Serves 8 – 10.
